It’s homemade ricotta that takes all of 30 minutes and each second of time is well worth the incredible flavor. You’ll never want to eat any store bought type ever again.  Milk, lemon juice, salt and a cheese cloth! That’s it....yum! And not just for Italian food, spread it on dark rye bread, add a spoonful to ground turkey or bake into an almond cake. I’m not a great baker, more of a cook, but watching the Great British Baking Show inspires me to try new things. My donuts were a bit of a disaster but here I have chocolate molten cakes with a center of peanut butter that was done as a technical challenge on the show. But ALL you do is take a regular molten cake recipe and add a tablespoon of peanut butter to make it goo-out with the first bite. Yum! I also made cannoli with homemade ricotta flavored with chocolate chips. Fresh ricotta makes takes any recipe with in a whole other direction!

Ok maybe I’ve not ‘radically’ changed it but I think both my Italian grandmothers are looking down at me wondering what is underneath the traditional Bolognese sauce. In my attempt to still enjoy dinner without too much sacrifice I cooked spiral zucchini to replace the pasta without skimping on anything in the delicious sauce. A little less carbs during the week may just allow me to shed a few pounds...or maybe not?  Regardless it is a wonderful meal and if I didn’t think tooooo hard I almost (just almost) didn’t miss the pasta. For the best bolgnese sauce see recipe on my website. @tablenspoon

My friends sent me this photo on Saturday of my recipe for chicken shwarma and a bulgur wheat, eggplant and pomegranate molasses dish that they made in @tablenspoon online for the Cornell95 cooking reunion. It was not only great to connect to former classmates but fun to make a few recipes virtually together. Though we were all slicing, chopping and mixing, we definitely managed to joke and poke fun at each other. What a great way to spend time with friends from all over the world.
