Turkey burgers with or without zucchini

A delicious alternative to the classic beef burger.  Turkey can be dry, and this recipe takes ricotta cheese and egg to add moisture.  If you prefer not to add the bread crumbs, no problem, but best to add less ricotta as per below.

I like these on a pretzel or brioche bun for added flavor.

Ingredients

Recipe serves: 5-6
1.5 pounds ground turkey
1/4 cup bread crumbs (you can omit but remove 1 tablespoon ricotta cheese)
1 egg, beaten
1/4 white onion, finely chopped
1/2 cup ricotta cheese (less 1 tablespoon if not using bread crumbs)
1/4 cup parmesan cheese
1 teaspoon salt
few grinds of black pepper
option: 1 cup shredded zucchini
1 tablespoon butter for saute pan (not grill)
5-6 brioche hamburger buns
sides
lettuce leaves, romaine or iceberg, crispy cold
sliced avocado
sliced tomatoes (in season)
mustard
jalepanos
salsa- red, mango or other

In a small sauté pan over low heat, sauté the onions until translucent, about 4-5 minutes.

In a large mixing bowl, add the turkey, breadcrumbs, ricotta, parmesan, egg, onions, zucchini if adding and salt and pepper.

Mix very well assuring everything is well incorporated. I often use my hands to really mix together.

Form into round, flat patties to shape of bun and refrigerate, bringing to room temperature just before ready to grill.

Cook on a grill, or use a cast iron sauté pan with 1 tablespoon melted butter over medium heat and cook well until internal temperature is 165F, you do not want these to be at all pink in the center. The meat should be nicely browned on outside and white on the inside.

Serve immediately on a warmed brioche bun with sides of lettuce, avocado, tomato (in season), mustard.
