delicious Italian spaghetti & meatballs

There is almost nothing as comforting as a plate of spaghetti and meatballs.   Nothing sophisticated or too complicated but a plate of warm, satisfying pleasure that is almost a hug in a bowl.  Or at least that’s the way I think of it.

The selection of meats in the recipe can be all one type, such as beef, or you can mix it up with beef, pork and veal in any proportion.  Adding different meats will create more complex flavors but with meatballs, happiness is achieved regardless.  The sauce is super simple.  I like to use passata, which is a pureed tomato without any chunks, and the best brand for this is Mutti.  It comes in a tall, elegant looking jar and my Italian friends swear that it’s the best by far.  I have to agree.

Adding a bit of butter to finish off the tomato sauce is from my mother.  It adds a bit of richness that makes it more delicious.  If you also want to take a bit of the parmesan rind and plop it in the sauce, it creates a bit of saltiness and acid.

Ingredients

Recipe serves: 6
meatballs
2 pounds ground chuck beef you can also mix meats with 1/2 pound pork and 1/2 pound veal
1 3/4 bread crumbs, plain
1 cup parmesan cheese, you can also
4 large garlic cloves, finely chopped
2 eggs, slightly beaten
1/2 cup red wine
1/2 cup water
2 teaspoons salt
a little olive oil for the pan
optional: 1/4 cup chopped fresh parsley or spinach (finely chopped)
tomato sauce
2 tomato passata or 2 boxes of chopped tomatoes Mutti is the best
4 large garlic cloves, finely chopped
1 1/2 tablespoons olive oil
1-2 teaspoons salt
4 fresh basil leaves
1 tablespoon butter
optional: add a chunk of the rind of parmesan cheese (about 1-2 inch piece)

Preheat oven to 400F. Prepare a large baking sheet with a thin, thin layer of olive oil. I like to use a pastry brush to spread.

In a large bowl, add all the meatball ingredients aside from the egg and water, mixing together with hands until all mixed.

Add eggs and water, mixing well again.

Using a ice cream scoop, form meat into a ball and place on the prepared baking sheet. Place each meatball on pan about 1/2 inch apart.You can use hands to roll into a ball.

Bake for 20 minutes in the oven and then set aside. You can make these in advance.

tomato sauce

While to meatballs are cooking, place the olive oil and garlic in large saucepan over medium heat.

Cook, stirring constantly, for 3-5 minutes until the garlic is just translucent.

Add the tomatoes, salt, basil and cook for at least 30 minutes. Be careful of any splatter.

Option to add the parmesan cheese rind at this point as well.

When sauce is finished cooking, add the butter and stir in well.

Add the meatballs and cook for at least 15 minutes until warmed throughout.

Serve over a plate of beautiful, al dente cooked spaghetti.
