Juicy and tasty turkey burgers

Turkey burgers are a great alternative to beef burgers.  In order to add lots of flavor, the fresh scallion, basil and capers create the perfect combination.

I like to serve with some type of potatoes, whether French Fries from the freezer with a bit of garlic and parmesan or boiled potatoes with olive oil and chives- in no time you have a great meal in little time!

Ingredients

Recipe serves: 8
2 pounds ground (minced) turkey meat
1/2 cup basil, finely chopped
1/3 cup scallions, finely chopped
1 tablespoon capers, finely minced
2 eggs
1/2 cup bread crumbs
salt and ground pepper
8 whole wheat buns, or English muffins- best toasted
optional
8 thinly slices of red onion
8 leaves of romaine and butter lettuce

In a medium bowl, using a fork, stir all ingredients together until very well combined.

Using a round 3 1/2 inch (88mm) cutter, press the turkey mixture into a patty. Place on a clean plate. Repeat.

Cover in plastic wrap (cling film) in refrigerator until ready to grill.

Light a grill or heat a grill pan. Season each patty on both sides with salt and pepper.

Grill over medium heat until cooked through, 5-6 minutes per side.

In meantime, toast the buns or english muffins.

Place each turkey patty onto bun, add a slice of onion and lettuce. Serve immediately.
