Ingredients

2 pounds ground (minced) turkey meat

1/2 cup basil, finely chopped

1/3 cup scallions, finely chopped

1 tablespoon capers, finely minced

2 eggs

1/2 cup bread crumbs

salt and ground pepper

8 whole wheat buns, or English muffins- best toasted

8 thinly slices of red onion
-
8 leaves of romaine and butter lettuce

In a medium bowl, using a fork, stir all ingredients together until very well combined. |

Using a round 3 1/2 inch (88mm) cutter, press the turkey mixture into a patty. Place on a clean plate. Repeat. |

Cover in plastic wrap (cling film) in refrigerator until ready to grill. |

Light a grill or heat a grill pan. Season each patty on both sides with salt and pepper. |

Grill over medium heat until cooked through, 5-6 minutes per side. |

In meantime, toast the buns or english muffins. |

Place each turkey patty onto bun, add a slice of onion and lettuce. Serve immediately. |
