grilled salmon on cedar boards

If you have never made salmon on cedar planks you will find it hard to ever eat salmon in a different way.  The flavor is rich, hearty and wonderful.  Even if you use the cedar plank and season the salmon with a little salt, the results will be just as delicious.

This recipe works well in the summer because it is best on an outdoor grill because there is a little bit of smoke involved but you can also make using an oven.  I have explain both methods.

The photo shows salmon done with just salt and olive oil (back) and with the Dijon mustard and brown sugar (front).

Ingredients

Recipe serves: 4
1 pound salmon fillet, skin on, cut into 4 pieces
1 cedar plank, soaked for at least 1 hr
rub
4 teaspoons dijon mustard
4 tablespoons brown sugar
salt, for seasoning

Place cedar plank in a sheet pan with water and place a heavy object on top of the board so it does not float. Soak for 1 hour.

Preheat the grill to a high temperature.

Season each piece of salmon on both sides with salt.

Evenly coat the surface of each piece of salmon with 1 teaspoon Dijon mustard, and then with 1 tablespoon brown sugar.

Dry the plank with paper towels, and change grill onto medium heat.

Put the seasoned salmon skin side down on the plank.

Cook the salmon with the lid closed until it's just opaque in the center and begins to brown slightly around the edges, about 10-12 minutes.

Preheat the oven to 325F.

Arrange salmon on a plank and place on a baking sheet to catch juices. Bake for 15-20 minutes or until the fish becomes flaky with a fork.
