Could not be easier, and why try another way to eat your greens.  You can keep this simple with lemon and olive oil, or add some red chili flakes, grated parmesan (or other type), pine nuts or sun dried tomatoes.  Depending on what you’re serving for main course, the flavors can be developed to complement any dish.

Ingredients

Recipe serves: 4
1 head broccoli cut into florets (or 12 oz broccoli florets)
2 tablespoons olive oil
juice of one lemon
1/2 lemon, sliced in thin rounds
salt and pepper to taste

Preheat oven to 450F.

Spread the florets on a baking sheet and drizzle with olive oil then toss the florets in the oil to combine.

Place lemon wheels around the broccoli florets.

Place into the oven and roast for 15 minutes.

Remove from oven and squeeze over the juice of one lemon.

Place back in oven for at least another 10-15 minutes until charred, checking after 5 minutes.

Remove from oven and season with salt and pepper.

to serve

Serve warm or at room temperature with the cooked lemons.
