Prawns with fresh tomatoes

I first had this dish at my sister-in-law’s house.  She is from Argentina, and grew up having the dish as a regular feature in many meals.  What is great about the recipe, is in the simplicity.  Just a few ingredients and you have a delicious (and colorful) meal.  Be sure to find fresh prawns and flavorful tomatoes to assure the best results.

The dish is best served with white or brown rice- you can serve on the side or underneath the prawns.  And no need to only consider as a main course as it works just as well for a starter or even on a brunch buffet.

Ingredients

Recipe serves: 6
2 pounds (12 to 15 per pound) shrimp, shells and tails removed
2 pounds fresh cherry or mini tomatoes, cut in half
5 cloves of garlic, skin removed and minced
3-4 tablespoons olive oil
salt, to taste
large handful cilantro (coriander), leaves only

In a large saucepan, pour olive oil and add fresh tomatoes. Cook for 3-4 minutes.

Add garlic and cook for another 5 minutes, stirring a few times to assure flavors blend. Add salt and taste, adjust as preferred. You can prepare up to this step 2-3 hours in advance, heat up again and then add prawns 10 minutes before serving.

Add the prawns and cook for 8-10 minutes until the prawns turn pink and are cooked through.

Before serving toss in the fresh cilantro, scoop all into a serving dish.

Serve with a bowl of brown or white rice.
