Ingredients

2 pounds (12 to 15 per pound) shrimp, shells and tails removed

2 pounds fresh cherry or mini tomatoes, cut in half

5 cloves of garlic, skin removed and minced

3-4 tablespoons olive oil

salt, to taste

large handful cilantro (coriander), leaves only

In a large saucepan, pour olive oil and add fresh tomatoes. Cook for 3-4 minutes. |

Add garlic and cook for another 5 minutes, stirring a few times to assure flavors blend. Add salt and taste, adjust as preferred. You can prepare up to this step 2-3 hours in advance, heat up again and then add prawns 10 minutes before serving. |

Add the prawns and cook for 8-10 minutes until the prawns turn pink and are cooked through. |

Before serving toss in the fresh cilantro, scoop all into a serving dish. |

Serve with a bowl of brown or white rice. |
