bountiful Bircher muesli with yoghurt, cinnamon & fresh apples

A lovely addition to breakfast or a brunch is hearty, healthy and satisfying.  Many recipes just contain yoghurt, but I like to add a bit of milk to lighten the mixture.

Because muesli served with yoghurt can be quite filling, I recommend using small bowls to serve.  My recipe uses apple as an ingredient, which is the more traditional flavor, but you can mix with any seasonal fruit – berry, peaches, apricots, pears, blueberries. Oh, and the cinnamon makes it just delicious!

Ingredients

Recipe serves: 8
2 cups traditional meusli cereal
1 cup yoghurt
1 1/2 cups milk
1/2 teaspoon cinnamon
1 apple finely sliced into strips
optional, a handful of chopped nuts - walnuts, pecans, almonds
garnish
sprinkle of cinnamon
1 cinnamon stick, cut in half

Bircher muesli was created in 1900 by a Swiss-German physician, Maximilian Bircher-Benner, in his crusade to help fight tuberculosis.  It was not created as a breakfast item but was to be served before lunch or dinner as a healthy first starter course.

Done

Place muesli in a medium mixing bowl.

Add milk, yoghurt and cinnamon, mix all together well.

Place in an airtight container to refrigerate overnight.

Before serving, add the fresh apple and mix well.

Place in a serving bowl, or in small individual bowls, sprinkle with cinnamon and/or the half cinnamon sticks and serve immediately.
