salmon with fresh pesto

Fresh pesto can be delicious on a variety of different fishes but works especially well with a luscious piece of salmon fillet.  The spicy, bright flavor of pesto complements the subtle, meat-like flavor of salmon.

If you cannot be bothered with making your own pesto, the dish works just as well with a good quality store-bought version of pesto.

Serve with a bowl of basic rice and some fresh green beans or broccoli with roasted tomatoes, and you have a perfectly balanced meal.

salmon
2 pounds salmon fillets
salt, to sprinkle over each piece
pesto
3 cups fresh basil leaves, soft stalks included
1/2 cup olive oil
1 cup grated Parmesan Reggiano cheese
1/2 cup Pecorino Romano
1/4 cup pine nuts
garnish
8 wedges of lemon
few basil leaves

Preheat over to 350F (175C).

Rinse off salmon filets with water, and lightly salt on both sides.

In a baking pan, place the salmon pieces and add about 2 tablespoons of pesto on top of each filet.

Spread pesto to coat well on each piece.

Place in oven for 20 minutes until interior cooked, though I like it slightly "rare." The temperature should be at least 145F (63C).

Serve immediately with a slice of fresh lemon and a basil leaf.
