3 cups fresh basil leaves, soft stalks included

1/2 cup olive oil

1 cup grated Parmesan Reggiano cheese

1/2 cup Pecorino Romano

1/4 cup pine nuts

8 wedges of lemon

Preheat over to 350F (175C). |

Rinse off salmon filets with water, and lightly salt on both sides. |

In a baking pan, place the salmon pieces and add about 2 tablespoons of pesto on top of each filet. |

Spread pesto to coat well on each piece. |
