Ingredients

Recipe serves: 8-10
Butter for the pan
1 1/4 cups (310 ml) milk
2/3 cup (150 grams) granulated sugar
3 eggs, room temperature
1 tablespoon vanilla extract
1/8 teaspoon salt
1 cup (120 grams) plain flour
2 cups seasonal berries: blueberries, blackberries, raspberries, cherries (pitted)
optional: powdered sugar for dusting, whipped cream or ice cream

Preheat oven to 350F (180C), place wire rack in the middle.

Prepare a flameproof baking dish or skillet at least 1 1/2 inch (3.8cm) deep.

Place the milk, 1/3 cup (75 grams) sugar, eggs, vanilla, salt and flour in a blender. Blend at top speed until smooth and frothy, about 1 minute.

Pour 1/4 inch (6.5 mm) layer of batter in the baking dish.

Over low heat, place the baking dish on stove top for 1-2 minutes until a film of batter has set on the bottom of the dish. Remove from heat.

Remove from heat, spread the fruit over the batter and sprinkle remaining 1/3 cup (75 grams) sugar.

Pour over the rest of the batter and smooth with the back of spoon.

Place in the center of the oven and bake for 50 minutes until the top is puffed and browned.

Serve warm with powdered sugar, whipped cream or ice cream. It will sink slightly as it cools.
