a trio of mini desserts – ode to the sweet tooth

A super simple dessert that requires just a bit of imagination and some small size portions!  I think of this dessert for all those cooks who hate to bake… and there are a lot of them.

My sweet trio can be composed of homemade items but makes as much of an impact if all the sweets come straight from the bakery.  I like that all three mini desserts add up to one dessert – you want to slice, scoop and pour in smaller portions, plus it makes for such a nice display.

Take a plate, put on a few brownies bites, add your favorite cookie with some seasonal berries.  Then right before serving fill a small glass with root beer and add scoop of vanilla ice cream.  Voila!  Oh, that is too French because this one is all American….but you can make a French version.

How about a sliver of apple Galette, a dollop of whipped cream on an espresso cup-size hot chocolate with a mini vanilla Eclair?  How about a small ice cream sundae, a slice of chocolate cake and a few pieces of chili-infused chocolate?  Or a mini chocolate milk shake with warm peanut butter cookies?

Next time, I am making an Italian version with a portion of Tiramisu, a decaf affogata (ice cream drowned in espresso) and an almond biscotti.   The options are endless and can be so much fun to think up!

Easy, easy and really a fun way to end any meal.

Recipe serves: 6-8
3 cans of root beer
1 pint vanilla ice cream
6-8 chocolate chip cookies or slivers of apple pies
large container of chocolate pudding
5 to 6 raspberries per person
whipped cream
optional
sprinkle of cocoa powder
serving ware
6-8 large plates
6-8 juice glasses for root beer floats
6-8 small bowls or ramekins for pudding

Preheat oven to 350F(175C) - optional step but nice if you want to warm up the apple pie or cookies.

Count out a dessert or dinner size plate and small glass (like a juice glass) for each guest.

Place apple pie or cookies in the oven and heat for 5 minutes.

Place a scoop of chocolate pudding in small bowls. Add a dollop of fresh whipped cream.

Using the small juice glasses, pour root beer to about 3/4 from the top.

Scoop vanilla ice cream into the glass with root beer.

Arrange the root beer glasses and chocolate pudding bowls onto serving plates.

Take the apple pie or cookies and evenly distribute on each plate. Add the raspberries to each plate.

Sprinkle cocoa powder over the chocolate pudding and whipped cream.

Serve immediately with a spoon.
