Ingredients

1 3-4 pound (1.5-1.8kg) whole chicken, washed and dried

wet rub

2 tablespoons olive oil

1/2 cup fresh lime juice (from 4 to 5 limes)

dry rub

1 tablespoon sea salt

1 tablespoon ground black pepper

1 tablespoon tumeric

2 tablespoons za'tar

stuffing
-
1 small onion, peeled and halved

1/2 lime

finish

4 cloves garlic, peeled and crushed

A bit of olive oil

Preheat oven to 450F (230C). Line a rimmed sheet pan with parchment paper. |

Mix together the wet rub ingredients in a small bowl. Rub half of the ingredients inside the chicken and half over the outside of the chicken, massaging well. |

In a small bowl, combine the dry rub ingredients and rub over the inside and outside of the chicken. |

Place the onion and lime inside the cavity of the chicken. |

Insert the garlic cloves underneath the skin of the breast. |

Drizzle a bit of olive oil over the chicken. Cover with a piece of aluminum foil, place in oven and roast for 1 1/2 hours. Baste every 20 minutes or so from the pan juices. |

Serve hot from the oven with roasted potatoes or rice. |
