Ingredients

2 large English cucumbers (less seeds, or 6 Persian cucumbers, peeled and diced

1 teaspoon cumin

1 green Thai chili, seeded and minced- 1/2 if you do not like heat!

6 medium fresh mint leaves, cut in thin strips

salt and pepper to tast, about 1/2 teaspoon

juice of limes, start with one and add as you go along

Add all ingredients to bowl aside from salt, pepper and lime juice. Mix well. |

Add a sprinkle of salt and pepper, taste, add lime juice, taste again and adjust seasoning to preference. |

Refrigerate before serving for 10 minutes to allow the spices to macerate. Serve cold. |
