Cucumber salad is refreshing anytime of year, and especially goes well with spicy foods.  This recipe is from the cookbook, Season, by Nik Sharma of the blog A Brown Table but slightly adapted.  Rather than using cumin seeds, I have substituted with cumin powder.

Ingredients

Recipe serves: 4
2 large English cucumbers (less seeds, or 6 Persian cucumbers, peeled and diced
1 teaspoon cumin
1 green Thai chili, seeded and minced- 1/2 if you do not like heat!
6 medium fresh mint leaves, cut in thin strips
salt and pepper to tast, about 1/2 teaspoon
juice of limes, start with one and add as you go along

Add all ingredients to bowl aside from salt, pepper and lime juice. Mix well.

Add a sprinkle of salt and pepper, taste, add lime juice, taste again and adjust seasoning to preference.

Refrigerate before serving for 10 minutes to allow the spices to macerate. Serve cold.
