sautéed swiss chard & kale

Swiss chard is a popular vegetable in the Mediterranean, and actually a cousin to the beet.  Whereas, beets are cultivated for the roots, swiss chard is a leafy green that is full of nutrients.  It is also known as silver beet, seakale beet, Sicilian beet or spinach beet.

You can use it pretty much like spinach or kale.  This recipe uses both Swiss chard and kale but you could use any proportion of either.

Ingredients

Recipe serves: 4
1 large bunch Swiss chard, stems removed
1 large bunch flat leaf kale (Lacinato), veins and stem removed, roughly chopped
1-2 tablespoons olive oil
2 cloves garlic, finely minced
1 tablespoon red chili flakes
salt and pepper, to taste
juice of 1/2 lemon
to serve
drizzle with more olive oil
few gratings of parmesan cheese

Heat oil in a very large sauté pan over medium heat and add garlic and red pepper flakes. Sauté for 30 seconds, until garlic is fragrant.

Stir in the swiss chard and kale, coating it in oil. Cover pan, lower heat and let cook for about 2 minutes, until greens are wilted.

Uncover, stir and cook for 2 minutes longer. Season with salt and pepper, squeeze over juice of 1/2 a lemon.

to serve

Place in serving dish and drizzle with olive oil.
