plain couscous

In Morocco the most common couscous is plain, and it serves as the base for Tagines.  It is usually steamed in a couscoussier, over the tagine which adds to its flavors.  Since most of us do not own a couscoussier, we follow the package directions and pour boiling water of the pasta-like grains.

The recipe here is basic, with no additional flavors.  Many recipes add garlic, herbs or even some pine nuts.

1 ½ cups dried couscous
1 ½ cups water
2 tablespoons olive oil
Salt and pepper
optional
chopped parsley

Directions

Combine the couscous and water in a medium pot and cook according to the package directions.

Once cooked which usually takes about 10 minutes, fluff up with a fork.

Toss with olive oil, salt and pepper to taste.

If serving separately add some parsley for a little color.
