Lime & orange red cabbage salad

This “salad” or coleslaw is delicious as a side to any grilled meal, Mexican or otherwise, but goes especially well in fish or shrimp tacos.  The crunchy bite of the red cabbage dressed with just simple orange and lime juice creates the right texture and flavor for the fish.  And the longer it marinates the better it tastes (at least up to 3 days).

Ingredients

Recipe serves: 6
1/2 small red cabbage, 3 cups, thinly sliced
1 large carrot, grated (about 1 cup)
1 medium shallot, finely chopped
1 clove garlic, finely chopped
1/4 cup fresh chopped cilantro (coriander)
1 medium orange, juiced
2 limes, juiced
2-3 tablespoons avocado, rapeseed (canola), vegetable oil
1/2 tablespoon sugar
salt and pepper, to taste

Place all ingredients in bowl, toss, season with salt and pepper, to again and taste. Adjust to preference.

Refrigerate for 1 hour or overnight to allow all the flavors to blend nicely together. Taste again and adjust anything an necessary.
