Here we just add fresh mint and garlic to add a little extra punch to what is one of nature’s most perfect foods.

Ingredients

Recipe serves: 4
1.5 pounds new potatoes, cleaned
4 tablespoons butter
2 tablespoons fresh mint, finely chopped in thin ribbons
2 cloves garlic, skin removed and crushed
salt and pepper, to taste
pepper, to taste

Done

Put the potatoes in a large saucepan and add enough cold water to cover. Season with about 1/2 tablespoon salt.

Bring to a simmer, uncovered, until the potatoes are fork-tender, about 30-35 minutes.

Remove potatoes from saucepan and drain all water.

Place butter in saucepan and gently melt. Add the garlic and cook until fragrant for less than one minute.

Place the potatoes back in pan, toss with the butter and garlic, add in the fresh mint and toss again to assure all is well coated.

Add salt and pepper, taste, toss again and adjust seasoning to preference.

Serve while piping hot.
