Ingredients

1.5 pounds new potatoes, cleaned

4 tablespoons butter

2 tablespoons fresh mint, finely chopped in thin ribbons

2 cloves garlic, skin removed and crushed

salt and pepper, to taste

Put the potatoes in a large saucepan and add enough cold water to cover. Season with about 1/2 tablespoon salt. |

Bring to a simmer, uncovered, until the potatoes are fork-tender, about 30-35 minutes. |

Remove potatoes from saucepan and drain all water. |

Place butter in saucepan and gently melt. Add the garlic and cook until fragrant for less than one minute. |

Place the potatoes back in pan, toss with the butter and garlic, add in the fresh mint and toss again to assure all is well coated. |

Add salt and pepper, taste, toss again and adjust seasoning to preference. |
