Insalata mista

The ingredients in most parts of Italy are so delicious and fresh that most of the salad and vegetable dishes are very simply prepared.  You don’t need a lot of extras when things are fresh and local.  This salad come in many different ways but this is a very basic salad.

I recommend using lettuces that are in season at the local farmer’s market, and adding to it based on the quality of vegetables.

Ingredients

Recipe serves: 4
3 scallions, cut into thin slices (white only)
1 small carrot, peeled and grated
1/2 fennel, remove core and thinly slice
1/2-1 head Boston, Butter, Escarole lettuce or combination
1/4 cup radicchio, finely sliced
options: thinly sliced bell pepper, fresh tomatoes,
dressing
olive oil
red wine vinegar or balsamic vinegar
salt, to taste

Wash and dry the lettuces.

Place all the lettuces and vegetables in a large salad bowl, sprinkle with salt and add olive oil and vinegar. Toss, taste, toss again and adjust seasonings.
