Grilled summer squash with feta

Move over tomatoes because squash is coming through….and boy are they good in the summer.  This salad allows the flavors of the squash shine with fresh ingredients that create a super delicious dish.  I would recommend only making it when squash is in season and at the height of its flavor profile.  It’s similar to a tomato in that the off season squash can be tasteless.

Ingredients

Recipe serves: 4
3 medium zucchini, cut in half lengthwise
2 medium yellow squash, cut lengthwise you can mix up/replace with other type squash like the short,squat one called patty pan
olive oil, to cover squash for grilling and more
1 small red onion, cut in 4 wedges
1/2 cup feta, cheese, crumbled
handful of fresh mint and basil, finely cut
dressing
1 lemon juiced
2 teaspoons champagne vinegar
⅓ cup olive oil
2 cloves garlic finely chopped
1 shallot finely chopped
salt and pepper, to taste

Preheat a grill over medium-high heat.

dressing

In a medium bowl, add all the dressing ingredients, whisk until well combined. Season with salt and pepper, mix again and continue to taste until you have a flavor you like.

Grill

Coat the squash and onion will olive oil and arrange in a single layer on the grill. Grill for 2-3 minutes, turn over and grill for another 3 minutes. When grill marks appear on both sides the squash is cooked. The onion may take longer but does not have to be completely soft.

Remove from the grill and transfer to a cutting board.

Slice the zucchini and yellow squash into 1 inch pieces. Roughly chop the onion.

In a serving bowl add the squash, zucchini, and onion. Crumble the feta on top, sprinkle with fresh mint and basil leaves and drizzle with the vinaigrette. Lightly toss and taste, adjust salt and pepper as needed and serve.
