cucumber and mint yoghurt (tzatziki/mast-o-khiar)

There are many renditions of yoghurt and cucumber recipes including those with mint, dill and even pistachios.  In Indian cuisine you have Raita, in Greek you will find Tzatziki, and in Persian it is Mast-o-Khiar. You will often see the shallots replaced with another allium, such as garlic or sweet onion.  Either are good options.  I find the shallots are less strong than adding fresh garlic but if you prefer garlic to onion than by all means make the change.

The recipe below is a complement to lamb, salads, vegetables….actually I love it with everything.  Cool and refreshing in texture and taste, the sauce seems to create the perfect balance to not only Persian food but many dishes with lots of spices.

Ingredients

Recipe serves: 6-8
2 cups Greek (thick) yoghurt
1 small shallot or 2-3 cloves garlic, very finely chopped
3 Persian cucumbers or one large, cut in 1/4 inch cubes
5-6 mint leaves, finely chopped
salt, flakes are best to taste
fresh ground pepper, to taste
optional
a few squirts of olive oil
add about 2 teaspoons of fresh dill, finely chopped
2-3 mint leaves for garnish

Aside from being a complement to a meat dish, you can serve Mast-o-Khiar as a pre dinner nibble.  Place in bowl with sides of sliced carrots, radishes, fennel, cucumber and/or red and yellow peppers.

Done

In a medium bowl, add 1/2 the shallots and all other ingredients and mix well. Season with salt and pepper to taste. Taste, and add more shallots to your preference (the worst is when you find something overpowering in allium flavor)

Place in a small bowl and garnish with the whole mint leaves.
