1 pound green cabbage

1 tablespoon vegetable or neutral oil

1 teaspoon cumin seeds

1/2 teaspoon ground tumeric

1/2 teaspoon red chili powder

1 teaspoon sea or kosher salt

3 tablespoons water

1/4 cup cilantro

Cut the head of cabbage in half. Then take one half and place it with the flat side down on the cutting board and thinly slice the cabbage into long strips. Then cut the strips in half which will yield 6-8 cups of cabbage. |

In a large nonstick pan heat oil. Add cumin seeds and allow them to sizzle. |

Add turmeric, red chili powder and cabbage, salt. Mix well and cook covered with the lid on for 5 minutes on medium heat |

After 5 minutes taste, do you like the texture? If yes, remove from heat. If not continue to cook on a low heat. |
