Making hummus is so easy that you will wonder why you ever bought it.  All that is required is a food processor and a few ingredients.

There are lots of different thoughts regarding the preparation of hummus: smooth or lumpy, lots of garlic, a spritz of olive oil, add more spice, or top with meat?  But the two things all hummus recipes contain are chick peas and tahini (sesame) paste.  You will find lots of different ways to add more flavor but this recipe is basic and traditional.

In this recipe you can make the hummus and the pita chips, or buy one or the other.  I think one of these should be homemade- either the hummus or the pita chips.  Toasted pita chips are so much better than anything store bought.  And you can use my suggestions for adding some more flavor, with paprika or chili powder, or create your own version.  Regardless everyone loves a homemade pita chip!

The most difficult part of the recipe is finding a good type of Tahini paste.  Tahini has a thick peanut butter-like consistency and is made from sesame seeds.

Ingredients

Recipe serves: 8
1 1/2 cups chick peas drained- reserving about 1/4 cup liquid should need to loosen final hummus with 1/2 the water, and more as necessary
1/2 cup tahini paste or butter
4 garlic cloves, peeled and mashed to mellow flavor, saute garlic in olive oil
3-4 tablespoons fresh lemon juice (2 lemons)
1 teaspoon salt, and more to taste
toasted pita
4 pieces white or wheat pita bread
olive oil, about 2-3 tablespoons
kosher salt, about 1 teaspoon
1-2 teaspoons chili powder or paprika
garnish
sprinkle of paprika, for color
Olive oil, a small pour for the top
pine nuts, sprinkle on top

Hummus is a ritual in many parts of the world.  Similar to how people go out for a coffee or a drink, in the Levant and parts of the middle east, you go out for a hummus.  You may here people call the food “biblical” and this is because hummus is mentioned in Hebrew Bible, “Come hither, and eat of the bread, and dip thy morsel in the hometz.”

Ingredients

  • toasted pita

  • garnish

Directions

Done

In a food processor place all ingredients (except garnish) and blend until all smooth and lovely.

Taste and add more more salt and any more liquid if necessary.

Put in a small serving bowl, create and indent in the center, sprinkle with paprika and add some olive oil into the indentation.

You can refrigerate for up to one week without any of the garnish.

Preheat oven to 350F(180C).

Slice pita pieces in half and then quarters and then eights.

Seperate top and bottom of each pita to have one layer.

Place on a baking dish, sprinkle and then brush with olive oil to assure each pieces has a bit, then kosher salt and option of paprika or chili powder.

Toast for 10 minutes until each is nice and crispy.

Serve immediately warm or store in an air-tight container for up to 2 days.
