Watermelon agua fresca- viva la summer!

Watermelon is the most colorful of fruits.   Just looking at one makes you think of summer near the pool or on the beach.  Refreshing in taste and always a burst of freshness, I love bringing the wonderful color and flavors to a summer meal.

Agua fresca can be made with many different types of fruits- and you see all different varieties in Mexico.  Serve over ice, with or without a bit of vodka!

For my version, I did not add sugar.  If the fruit is ripe enough, there may be no need.  But add a bit of sugar or simple syrup should the need arise.

Ingredients

Recipe serves: 6-8
1 whole small watermelon, about 5 cups cubed
4 limes, juiced
1/2 cup (125ml) cold water
ice cubes
optional
sugar or simple syrup to taste
fresh mint- 15 leaves or the whole stalk
vodka, as preferred by the glass

In a blender or food processor, blend the watermelon until smooth. Best to do in batches.

Place a strainer over a large bowl, pour in the processed watermelon to remove large pits (pips) and pieces.

Place juice in a large pitcher add the lime juice, water and mix well. Taste and add more lime if preferred, and sugar if sweetener is required.

Refrigerate for no more than two hours before serving. Serve with ice and fresh mint (optional)...and maybe a bit of vodka.
