Thai salad with peanut dressing

The recipe from Jennifer Segal, Once Upon a Chef, is delicious.  The dressing could be used on so many other vegetables, or even a grilled chicken breast.  I have followed Jennifer’s recipe almost exactly though I give measurements for each type cabbage, and also omit the cucumber.  You can also not add the edamame and it still tastes great. For the dressing I recommend brown sugar rather than white sugar, I think it tastes better.

No worries if you do not have all the cabbages, you can used just one type or even buy a pre-made coleslaw mixture.

Ingredients

Recipe serves: 6
Salad
I cup red cabbage, cleaned and shredded
2 cups Napa (Chinese) cabbage, cleaned and shredded
1 cup green cabbage, cleaned and shredded
1 whole carrots, shredded
4 spring onions, finely chopped
1 red bell pepper, chopped into thin pieces
1/2 cup cilantro (coriander), cleaned, stems removed and roughly chopped
Dressing
1/4 cup creamy or chunky peanut butter
2 tablespoons rice vinegar
2 tablespoons fresh lime juice, about two small limes or one large one
1 tablespoon soy sauce
3 tablespoons vegetable or peanut oil
2 tablespoons honey
2 1/2 tablespoons brown sugar
1 thumb size knob fresh ginger, peeled and finely chopped
2 garlic cloves, peeled and finely chopped
1/4 teaspoon fresh red chili, finely chopped (you can substitute red pepper flakes)

Salad

Place all ingredients in a large bowl and toss together well.

In bowl of a blender (I used a Nutribullet), add all the ingredients and blend until everything is incorporated.

Drizzle about half the dressing over salad, toss and taste. Repeat until you have the desired taste, depends on your preference. You will have some dressing left over and can store in refrigerator for a few days.
