roasted cauliflower and broccoli

A super easy dish that I like to serve with the Indian butter chicken recipe, but works equally well with anything else.  It does not contain any spices, just salt and pepper, but you can add tumeric, chili, coriander or paprika for a some extra flavor.

Ingredients

Recipe serves: 6-8
1 medium head broccoli, broken into florets
1 medium head cauliflower, broken into florets
2-3 tablespoons olive oil
salt to taste
good grinds of fresh pepper
optional
juice of half a lemon

In a more formal setting or dinner, only using the florets (tops) of broccoli is common.  However, I love the stalks and chop them into bite-size pieces.  If you prefer to use only the tops, the stalks can be cooked and then frozen to use in a vegetable stock, or blended into pesto sauce.

Preheat oven to 425F (220C).

Place broccoli and cauliflower onto a large baking sheet and toss (I use my hands) with 1-2 tablespoons olive oil until well coated.

Season with salt and pepper and toss again.

Roast in oven for 25-30 minutes until vegetables are slightly brown on edges and soft when pressed with a fork.

Plate along with main dish or serve family style, and then optionally squeeze juice of lemon all over for an extra punch of flavor.
