4 large potatoes, peeled, grated (about 650 grams)

4 tablespoons finely chopped chives

1 egg, beaten

2 tablespoons flour

1/2 teaspoon salt

at least 1/2 cup vegetable oil for frying

In a sieve or colander, squeeze out any water from the grated potatoes. You want to remove as much potato water as possible. Discard any water. |

In a medium bowl, add the potatoes, chives, egg and salt, combining well. |

Add one half the flour and bring the mixture together. Add more as needed until it can be formed into patties. |

Form into flat pancakes that are about 3 inches in size (7.5cm). |

In saute pan, add vegetable oil so it is covering entire base - about 1/4 of an inch (6mm)depth. |

Add the potato and cook until brown and crispy - about 5 minutes each side. |

Work in batches, add more oil and adjust heat as necessary. Place cooked fritters on baking sheet or plate into warmed oven. |
