Ingredients

Recipe serves: 8
4 large potatoes, peeled, grated (about 650 grams)
4 tablespoons finely chopped chives
1 egg, beaten
2 tablespoons flour
1/2 teaspoon salt
at least 1/2 cup vegetable oil for frying

In a sieve or colander, squeeze out any water from the grated potatoes. You want to remove as much potato water as possible. Discard any water.

In a medium bowl, add the potatoes, chives, egg and salt, combining well.

Add one half the flour and bring the mixture together. Add more as needed until it can be formed into patties.

Form into flat pancakes that are about 3 inches in size (7.5cm).

In saute pan, add vegetable oil so it is covering entire base - about 1/4 of an inch (6mm)depth.

Add the potato and cook until brown and crispy - about 5 minutes each side.

Work in batches, add more oil and adjust heat as necessary. Place cooked fritters on baking sheet or plate into warmed oven.
