3 large potatoes, peeled, grated (about 650 grams0
4 tablespoons finely chopped chives
1 egg, beaten
2 tablespoons flour
salt, about 1/2 teaspoon
vegetable oil for frying

In a sieve or colander, squeeze out any water from the grated potatoes.

In a medium bowl, add the potatoes, dill and egg, combining well.

Add one half the flour and bring the mixture together. Add more as needed until it can be formed into the patties.

Form into flat pancakes that are about 3 inches in size (7.5cm).

In saute pan, add vegetable oil covering entire base.

Add the potato and cook until brown and crispy- about 5 minutes each side.

Work in batches, add more oil and adjust heat as necessary. Place cooked fritters on baking sheet into warmed oven, or plate until ready to re-heat.
