Pinzimonio- fresh vegetable salad

Pinzimonio is fresh, seasonal vegetables or shaved vegetables, tossed together in a lemon-olive oil based dressing, no salad greens necessary.  You can take an array of vegetables from the recommended ingredients and use 2-4 in the salad.  The first time I made the salad, I mixed yellow peppers, red peppers, an array of colored carrots and fennel. What a melody and truly delicious.  To slice the vegetables, best to use a Mandoline, vegetable peeler and/or the side of a food grater.  I

The salad works well with a heavier main dish such as, a roasted meat, or Linguine alle Vongole.

Ingredients

Recipe serves: 6
seasonal vegetables
6 cups of thinly sliced vegetables- pick 3-6: cauliflower, fennel, radishes, cucumbers, carrots, peppers and/or cherry tomatoes, romanesco, broccoli
dressing
½ cup fresh lemon juice
1 tablespoon fresh thyme or basil
2 tablespoon honey (acacia or preferred more runny type)
½-¾ cup (125-185ml) olive oil
salt and pepper to taste

Directions

dressing

In a small bowl, combine all the dressing ingredients and whisk together well.

Place all vegetables in a large bowl.

Add one-half the dressing, toss, add seasoning, toss and taste, adjust any dressing and seasoning to your preference.
