6 cups of thinly sliced vegetables- pick 3-6: cauliflower, fennel, radishes, cucumbers, carrots, peppers and/or cherry tomatoes, romanesco, broccoli

dressing

½ cup fresh lemon juice

1 tablespoon fresh thyme or basil

2 tablespoon honey (acacia or preferred more runny type)

½-¾ cup (125-185ml) olive oil

salt and pepper to taste

dressingIn a small bowl, combine all the dressing ingredients and whisk together well. |

Place all vegetables in a large bowl. |

Add one-half the dressing, toss, add seasoning, toss and taste, adjust any dressing and seasoning to your preference. |
