Ingredients

1 1/2 cup orzo pasta

handful of basil or spinach, torn into pieces

2 tablespoons olive oil

juice of 1/2 lemon

2 tablespoons pine nuts, lightly toasted

1/3 cup feta cheese

In a medium saucepan, add about 5 cups water and bring to a boil. |

Add the orzo and cook for 6-8 minutes until rice is done. |

Drain orzo and drizzle in the olive oil, mix with a fork to break apart any pieces that may be stuck together. |

Place in a bowl, add the basil and lemon juice, mix together. Option to add the pine nuts. |

Serve hot or at room temperature. |
