Orzo with olive oil and fresh basil

Is orzo rice or pasta?  It is a small pasta that actually can be mistaken for rice because of its shape.  It makes a great side dish when you prefer something lighter than rice.  I often roast peppers and zucchini to make it more substantial, or add some butter and parmesan.

Here it is just a flavorful dish with a bit of good olive oil and fresh basil to complement more of a Greek menu.

Ingredients

Recipe serves: 4
1 1/2 cup orzo pasta
handful of basil or spinach, torn into pieces
2 tablespoons olive oil
juice of 1/2 lemon
optional
2 tablespoons pine nuts, lightly toasted
1/3 cup feta cheese

Done

In a medium saucepan, add about 5 cups water and bring to a boil.

Add the orzo and cook for 6-8 minutes until rice is done.

Drain orzo and drizzle in the olive oil, mix with a fork to break apart any pieces that may be stuck together.

Place in a bowl, add the basil and lemon juice, mix together. Option to add the pine nuts.

Serve hot or at room temperature.
