Orzo rice with or without fresh peas

Is it pasta or is it rice?  Whatever you think it is, orzo is easy to make and results in a good complement to many dishes.

Unlike rice, overcooking Orzo or creating a mushy mesh is much more difficult.  It is more of a pasta and should be treated that way.  For added flavor, my recipe includes a cube of chicken bouillon but you can make it with just salted water.

This recipe includes some peas for some additional flavor, but you can follow same recipe and do without.

thoughts&stories

Orzo can be prepared at least one hour before serving.  Before straining, set aside a bit of the water to add (loosen) the pasta. Heat for a few minutes before serving in a saucepan with the water.
