Orzo rice with or without fresh peas

Is it pasta or is it rice?  Whatever you think it is, orzo is easy to make and results in a good complement to many dishes.

Unlike rice, overcooking Orzo or creating a mushy mesh is much more difficult.  It is more of a pasta and should be treated that way.  For added flavor, my recipe includes a cube of chicken bouillon, but you can make it with just salted water.

This recipe includes some peas for some additional flavor, but you can follow the same recipe and do without.

Ingredients

Recipe serves: 6
2 cups orzo pasta
4 cups water
1 chicken boullion cube
1 cup fresh or frozen peas
1 tablespoon butter
salt, for water

thoughts&stories

Orzo can be prepared at least one hour before serving.  Before straining, set aside a bit of the water to add (loosen) the pasta. Heat for a few minutes before serving in a saucepan with the water.

In a large saucepan over medium heat, add water and bring to boil. Add chicken bouillon cube and mix to dissolve.

Add salt as necessary (taste with a spoon) and then mix in the orzo pasta.

Simmer for 5 minutes and then add the peas cooking for another 7-8 minutes until orzo is tender and peas are cooked.

Strain and add orzo and peas back into the saucepan. Add a tablespoon of butter, mix well and serve.
