frozen mexican hot chocolate

This is not the most traditional of recipes but just an easy, fun way to end any dinner– whether a Mexican feast or otherwise.  More traditional Mexican hot chocolates are created using solid Mexican chocolate and a molinillo- a wooden stick that froths the mixture to give top a slight foam.

This recipe adds a bit of spice just for fun.  If you do not want frozen, skip the cooling and blending with ice and serve with a scoop of vanilla ice cream.

Ingredients

Recipe serves: 4
8 ounces of good quality dark chocolate, plus small piece to garnish
4 cups plus two tablespoons whole milk
1/4 cup sugar
1/8 teaspoon cayenne pepper
1/8 teaspoon ground cinnamon
1-1 1/2 cups of ice cubes
optional
grating of chocolate over each
4 cinnamon sticks or dried pepperfor garnish
dollop of whipped cream for each

In a medium saucepan, mix together the milk with the cayenne pepper and cinnamon. Allow mixture to gently heat up, stirring occasionally.

While the mixture heats, add the sugar and then break up the chocolate into very small pieces and mix together well.

Once the milk is steaming, add the chocolate and whisk until it’s melted and incorporated. Taste and adjust the cayenne and cinnamon.

Use a molinillo or whisk to mix the hot chocolate vigorously until it's frothy, 3 to 4 minutes, or blend in a blender for about 2 minutes.

Place the mixture in refrigerator for about 15-20 minutes to cool completely.

Pour cooled chocolate into a blender, add the ice cubes and blitz until smooth and consistency of a milk shake.

Evenly distribute into 4 glasses and top each with a dollop of whipped cream.

Grate over the chocolate and add cinnamon stick (optional).
