Ingredients

2 1/2 pounds chicken breast, lightly pounded

1 cup plain bread crumbs

3/4 cup parmesan cheese, grated

zest of one lemon, juice of one half

2 eggs, beaten

about 3 tablespoons olive oil for pan and chicken

salt to taste

garnish

8 fresh lemon wheels

sprigs of flat leaf parsley, basil or arugula

Preheat oven to 375F (190C) degrees |

On the bottom of a large baking dish or baking sheet, generously rub about 1 tablespoon olive oil to prevent chicken from sticking. |

Season chicken with salt on both sides. Set aside. |

Set up your assembly line with eggs in one bowl, bread crumb mixture in another and then seasoned chicken. |

Place chicken in prepared baking dish or sheet and sprinkle each breast with a little more olive oil. You want the chicken in a single layer. |

Cook in oven for 20 minutes or until cooked through. For last 5 minutes, place oven on broil setting and brown the chicken until crispy. |

When ready to serve, squeeze juice of one-half the lemon and garnish with fresh flat leaf parsley, basil or arugula and few few round slices of lemon. |
