1 package, 8 ounces or more Halloumi cheese

olive oil

optional garnish: parsley, cilantro, or mint

Slice Halloumi cheese lengthwise into 1/2 inch (13mm) pieces. You want pieces thick enough so they do not fall apart on the grill. Can be done two hours in advance. |

Heat up grill, heavy cast iron or heavy based sauté pan. |

Brush both sides of each piece of cheese with olive oil. |

Place on grill or pan, cooking for about 3-5 minutes each side or until the cheese has griddle marks. |

Put on serving plate with a garnish of parsley and serve immediately. |
