Grilled chicken with fresh spinach and cherry tomatoes

Grilled chicken tastes great and is super fast and easy to prepare.  I prefer it in the summer months but that being said, anytime really works- depending on where you live and how much you enjoy grilling in various types of weather.

The recipe here requires really good, ripe tomatoes so get them at the farmer’s market or buy a brand you know if full of flavor.

Ingredients

Recipe serves: 4-6
chicken
4-6 boneless, skinless chicken breasts
olive oil, to brush each chicken breast
salt and pepper, to season chicken
1/2 lemon, for the juice
tomatoes
1-2 pints (about 2 cups/ 300 grams) mixed baby or cherry tomatoes- 2 cups for 6 people and 1 cup for 4 people
1-2 cup fresh clean spinach, hard stalk removed
1/4 cup olive oil, 1/2 for tomatoes and 1/2 for spinach
salt and pepper, to taste

Directions

Done

Brush each chicken breast with olive oil, sprinkle with salt and pepper, on both sides.

Place on a grill over moderately high heat, cooking about 8 minutes per side.

While chicken is grilling, cut cherry tomatoes in half. Place in large bowl.

Toss the cherry tomatoes with half of the olive oil and salt and pepper, taste and add more seasoning to preference. Set aside.

Add spinach to a large bowl, the other half of the olive oil, salt and pepper. Toss, taste and add more seasoning as preferred.

Remove chicken from grill and place on serving dish. Squeeze lemon juice over pieces, top with spinach and cherry tomatoes. Serve immediately, or within 30-45 minutes at room temperature.
