Ingredients

chicken

4-6 boneless, skinless chicken breasts

olive oil, to brush each chicken breast

salt and pepper, to season chicken

1/2 lemon, for the juice

tomatoes
-
1-2 pints (about 2 cups/ 300 grams) mixed baby or cherry tomatoes- 2 cups for 6 people and 1 cup for 4 people

1-2 cup fresh clean spinach, hard stalk removed

1/4 cup olive oil, 1/2 for tomatoes and 1/2 for spinach

salt and pepper, to taste

Brush each chicken breast with olive oil, sprinkle with salt and pepper, on both sides. |

Place on a grill over moderately high heat, cooking about 8 minutes per side. |

While chicken is grilling, cut cherry tomatoes in half. Place in large bowl. |

Toss the cherry tomatoes with half of the olive oil and salt and pepper, taste and add more seasoning to preference. Set aside. |

Add spinach to a large bowl, the other half of the olive oil, salt and pepper. Toss, taste and add more seasoning as preferred. |

Remove chicken from grill and place on serving dish. Squeeze lemon juice over pieces, top with spinach and cherry tomatoes. Serve immediately, or within 30-45 minutes at room temperature. |
