Here we have a super simple salad that will complement any Asian style meal.  Drizzle the dressing to just lightly coat the greens to assure it does not overpower the simple, crispy greens.

Ingredients

dressing
⅓ cup peanut or other neutral oil
2 tablespoons freshly squeezed lemon juice, or more to taste
1 teaspoon soy sauce
½ teaspoon sesame oil
salad
about six cups of lettuce greens- anything works so pick your favorite
1 Persian cucumber, thinly sliced in matchsticks
sea salt and freshly ground black pepper
garnish
sprinkle of sesame seeds
1/4 cup spring onions, cut in thin slices

Clean and dry greens, and set aside. Keep in refrigerator until ready to use.

Combine all the ingredients except the greens in a small blender or nutribullet, and blend about 30 seconds until forms an emulsion.

Taste and adjust the seasoning, until the balance tastes right to you.

Add greens and cucumbers to a large salad bowl, drizzle on about 1/2 dressing, toss well, taste and add more dressing to your preference.

Season with salt and pepper, toss again, taste until you have the perfect balance.
