basic Indian cucumber raita

There are many renditions of Indian raita.  Yogurt is a counterbalance to the spices or heat in many cuisines.  In Indian cuisine you have Raita, in Greek you will find Tzatziki, and in Persian it is Mast-o-Khiar. You will often see the shallots replaced with another allium, such as garlic or sweet onion.  Either are good options.  I find the shallots are less strong than adding fresh garlic but if you prefer garlic to onion than by all means make the change.

The recipe below is a very basic raita.   You can add garlic or sweet onion, some people like mint, and you can eliminate the cumin for something very plain and refreshing.  You can eat from small cups before or during the meal, or just place a large spoonful directly on your plate.

Ingredients

Recipe serves: 4-6
2 cups plain yogurt, not thick
3 Persian cucumbers or 1/2 large, peeled and grated or cut into small cubes
1/2 teaspoon cumin
squeeze of lemon
pinch of fine salt and pepper, to taste

thoughts&stories

Aside from being a complement to a meat dish, you can serve raita as a pre dinner nibble.  Place in bowl with sides of sliced carrots, radishes, fennel, cucumber and/or red and yellow peppers.  This is not traditional Indian but just a delicious appetizer.

In a medium bowl, add 1/2 the shallots and all other ingredients and mix well. Season with salt and pepper to taste. Taste, and add more shallots to your preference (the worst is when you find something overpowering in allium flavor)

Place in a small bowl and garnish with the whole mint leaves.
