Christmas tree pressed cookies

The Christmas season begins when my mother makes her “famous” Christmas cookies.  As our family has grown, her quantities have increased and she freezes the cookies as they are prepared in batches over many weeks.  No matter how many I receive, it is never enough and sometimes I hide them from my kids.  Not a very kind thing to do but the nostalgia the flavors bring to mind are worth my little deception.

The pressed Christmas trees are really easy to make, you just need a good cookies press.  You can also mix up the shapes- wreaths, trees, holy.

Ingredients

1 cup (2 sticks/226 grams)butter
3/4 cup (170 grams) sugar
1 egg
2 1/4 cups sifted flour
1/8 teaspoon baking powder
pinch of salt
1 teaspoon almond extract
green and red sugar sprinkles

Preheat oven to 375F (180C). Prepare baking pans with parchment paper.

In the bowl of an electric mixer, cream the butter and gradually add the sugar until light and fluffy.

Add the egg and almond extract and blend well.

Whisk the baking powder and pinch of salt into flour.

Add the flour into the butter mixture and mix for 1-2 minutes until all is incorporated.

Place dough into a cookie press with the Christmas tree attachment.

Form cookies onto the baking sheet, about 1 inch (2.5cm) apart. Sprinkle with sugar.

Bake for 10 to 12 minutes until just lightly golden around edges.
