Buttermilk marble cake

Can’t decide between a vanilla or chocolate cake then this is the choice for you.  I adapted the recipe slightly from The New York Time’s cooking website.  I opt to make without the frosting, or naked, but you could add any type of basic vanilla or chocolate icing if preferred.  I like to just sprinkle with some confectioner’s sugar and/or cocoa, or even shaved chocolate for a little decoration.

As with baking most cakes, the ingredients (eggs, butter, buttermilk) are best at room temperature.

Ingredients

Recipe serves: 8-10
for vanilla cake base
3/4 cup (170 grams) unsalted butter, softened
2 1/2 cups (300 grams) cake flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 2/3 cups (334 grams) sugar
1 cup (270ml) buttermilk
1 teaspoon vanilla extract
3 eggs, slightly beaten
for chocolate part of cake
1 ounce (28grams) chocolate, best unsweetened or 60% plus
1/4 teaspoon baking soda
2 tablespoons buttermilk
1 tablespoon sugar
option
sifted confectioner's sugar, cocoa powder or shaved chocolate for decoration

Preheat oven to 350F(180C).

Spray a 9-inch (about 22cm) tube pan or bundt cake pan with cooking spray, or butter and flour to prevent sticking.

In a medium bowl, sift together the flour, baking powder, 1/2 teaspoon salt and sugar.

In the bowl of an electric mixer, add the softened butter and using the paddle attachment, blend to create a creamy texture.

Add all the dry ingredients and blend on low speed, you do not want to over mix.

Combine the buttermilk and vanilla and stir into batter on a low speed.

Add the eggs and blend until incorporated, once again not over mixing. Set aside.

for chocolate cake

Melt the chocolate in a medium size heatproof bowl over a pot filled with a few inches of simmering water.

Remove from heat, add the 1/4 teaspoon baking soda, 1 tablespoon sugar, and 2 tablespoons hot water (use water you had simmering).

Whisk together until well blended. Then fold about 1 cup of the vanilla batter into the chocolate mixture creating the chocolate batter.

Add a small amount of the vanilla batter into the prepared baking pan, then add a small amount of the chocolate, alternating once again with vanilla and chocolate forming two layers of each.

Run a knife through the layers to create the marbling effect.

Bake for 45-50 minutes, starting to check cake after 35 minutes. The cake should be a little soft in the middle, just slightly bouncing back when touched towards the middle.

Remove from oven, allow to cool for 30 minutes and then invert baking pan onto a large serving plate.

Sift confectioner's sugar or combination of sugar and cocoa powder over cake if desired.
