2 Bosc pears, ripened

½ cup water

mascarpone

½ cup mascarpone cheese

½ cup plain yogurt (European style)

1 teaspoon vanilla extract

3 teaspoons powdered sugar

1/8 teaspoon cinnamon

optional: 1 tablespoon espresso coffee, cold

½ cup homemade or store-bought granola

Preheat the oven to 375F. |

Cut the pears in half lengthwise. Using a large spoon, scoop out the center of each pear half and discard the core and seeds. |

Place pears in a rimmed baking pan with the cut side up. |

Sprinkle evenly with sugar and dot with butter and dust with cinnamon. |

Add ½ cup water to the pan, pouring on the side, not over the pears. Cover in foil. |

Bake until the pears are tender for at least one hour, checking after 40-45 minutes. You can check with a fork, poking gently to see if pear is soft. |

Pour in vanilla, sugar, cinnamon, mix again and then finish with cold espresso assuring all is blended nicely together. |

to serveOn a large serving dish, or individual dessert plates, scoop and smooth the mascarpone onto the plate, top with baked pears, evenly distribute granola over pears and serve immediately. |
