baked pears with mascarpone cream & granola

Baking pears is a super easy dessert that is best right when all the luscious variety of pears are in season…a baking dish, bit of water, cinnamon, sugar and pop it in the oven for an hour.

You can bake the pears right when sitting down for dinner for a hot dessert, or hours before and serve warm or at room temperature.  Adapt the recipe by scaling down for two people using just one pear and half the rest of the ingredients, or doubling up to serve 8 or more!  This is one of the things I like best about this dessert.

Here you have the sweetness of fruit, the creaminess of mascarpone and the crunch of granola on one plate.  Perfection!

2 Bosc pears, ripened
1 tablespoon unsalted butter
2 teaspoons granulated sugar https://tablenspoon.com/wp-admin/post.php?post=2402&action=edit#
sprinkle of ground cinnamon
½ cup water
mascarpone
½ cup mascarpone cheese
½ cup plain yogurt (European style)
1 teaspoon vanilla extract
3 teaspoons powdered sugar
1/8 teaspoon cinnamon
optional: 1 tablespoon espresso coffee, cold
½ cup homemade or store-bought granola

Everything can be made ahead and then put together when ready to serve.  You can warm pears in a 170F (78C) oven for 15-20 minutes, or leave at room temperature.

Ingredients

Preheat the oven to 375F.

Cut the pears in half lengthwise. Using a large spoon, scoop out the center of each pear half and discard the core and seeds.

Place pears in a rimmed baking pan with the cut side up.

Sprinkle evenly with sugar and dot with butter and dust with cinnamon.

Add ½ cup water to the pan, pouring on the side, not over the pears. Cover in foil.

Bake until the pears are tender for at least one hour, checking after 40-45 minutes. You can check with a fork, poking gently to see if pear is soft.

mascarpone cream

Add the mascarpone and yogurt to a bowl and mix well.

Pour in vanilla, sugar, cinnamon, mix again and then finish with cold espresso assuring all is blended nicely together.
Taste and adjust anything if necessary to your preference.

to serve

On a large serving dish, or individual dessert plates, scoop and smooth the mascarpone onto the plate, top with baked pears, evenly distribute granola over pears and serve immediately.
