hot or not avocado toasts

Avocado on toast is all the rage.  It is funny how you can find it almost everywhere.  I knew the world was mad for it when we saw it on the menu of a little cafe in Portugal!

Pile up some mashed avocado on your favorite toast and it will keep you going for hours.  It takes only a few ingredients and I like to add a little chili flakes for some extra flavor.

2 large ripe avocados
16 slices small brown bread, cut in 1/2" slices and toasted
juice of half a lemon
sea salt
olive oil
red chili flakes (optional)
garnish
cilantro leaves, chives, or lemon wheels

Well, I guess the healthy Omega-3 fatty acids, beta-carotene, not to mention Vitamin E, C and B-6 make avocado toasts an ideal choice for breakfast or lunch.  Though relatively high in calories, avocado contains healthier forms of fat.

Set oven to broil.

Mash up the avocado with a fork into nice chunks, or completely smooth, depending on your preference. I prefer chunky.

Add a bit of salt and squeeze of lemon juice and taste, adjust seasoning as needed. Set aside while making toasts.

Place bread slices on a baking sheet and brush with olive oil on top side.

Put baking sheet under broiler for 3-4 minutes. Make sure to watch the bread to avoid burning!

Remove from oven, cool toast for a few minutes and then pile on the mashed avocado.

Sprinkle with flaky salt and red chili flakes (if desired) and a bit of olive oil.

Serve on individual plates or a plater with fresh chive, cilantro or lemon garnish

Serve within one hour, the avocado will begin to turn brown if not eaten within a couple hours.
