Ingredients

3/4 cup toasted almonds, crushed
3 eggs
1 teaspoon vanilla
1/4 almond extract
2 cups plain flour
7/8 cup of sugar
1 teaspoon baking powder
pinch of salt
1/3 cup mini chocolate chips

Prepare a baking sheet with parchment paper.

Preheat oven to 300F (150C).

In a small mixing bowl, beat eggs, vanilla and almond extract with a whisk.

In a mixing bowl combine the flour, sugar, baking soda and salt, whisk together and set aside,

Add egg mixture to flour and mix until blended. Divide the batter into two bowls and divide almonds into both bowls. Add the chocolate chips to one of the batters. Mix.

Pat out dough into two logs about 2 inches (5cm) thick. And space them 2 inches (5cm) apart on the baking sheets.

Bake in the middle rack of the oven for 50 minutes or until golden brown.

Remove from the oven and cool on a baking rack for 5 minutes.

Place on a cutting board and with a serrated knife slice diagonally at a 45 degree angle about 1/2 inch (127mm) thick.

Change oven to 275F (135C).

Place the slices flat onto the baking sheet and return to the oven for 20 to 25 minutes, flipping over half way through.

Remove from oven, cool completely and store in tightly covered container.
