Ingredients

2 pints (about 2 cups/ 300 grams) mixed baby or cherry tomatoes

1/2 pound (226 grams) of Boccocini mozzarella

one handful basil, roughly chopped, and additional sprig for garnish

2 garlic cloves, finely chopped

about 1/4 cup olive oil

salt and pepper, to taste

Cut tomatoes in half and place in a large bowl. |

Cut Bocconcini mozzarella in half or if using large bowl, pieces similar in size to tomatoes. Add to bowl with tomatoes. |

Add the garlic, chopped basil and olive oil. Gently mix all together. |

Taste and season with salt and pepper. Taste again, adjust seasoning as needed. |

Place in serving dish or wooden bowl with the fresh sprig of basil on top. |
