Ingredients

1 portion of pastry dough, store-bought or homemade

1 tablespoon flour, for rolling out pastry

4-5 fresh figs

2 small ripe peaches

2 ripe plums

1/4 cup sugar

2 tablespoons, 1/4 of a stick cold unsalted butter, cut into small cubes

1/2 teaspoon (or more) of cinnamon

serve with yoghurt or vanilla ice cream

Preheat oven to 400F(205C). |

Line a large baking sheet (13" x 17", 33cm x 43cm) with baking parchment (parchment paper). |

On a lightly floured surface, roll out cold pastry dough into a large rectangle, one that will fit the baking sheet. |

Place dough onto parchment paper. |

Remove the skins from the peaches and cut in half. Remove the pits (pips). |

Cut plums in half, remove pits (do not remove the skins). |

Cut off stem of the figs. |

Each fruit is then cut into quarters and then in sixths. Try to make them as uniform as possible. |

Leaving an edge of about 1/2 inch (2 cm) around pastry place a row of figs followed by a row of peaches and then plums until the pastry is filled. |

Place in the oven (middle rack) and bake for 50 minutes to one hour, until all the fruit is golden brown. |

Serve warm or room temperature with a little dabble of yoghurt or vanilla ice cream. |
