a Greek salad

The classic Greek salad has only fresh vegetables and no lettuces.  Here is a version that I like to make though often I remove the green peppers and may mix in some crunchy romaine.

Instead of fresh lemon, you can use a white or sherry vinegar.  Drizzle on the best quality olive oil to assure it coats each ingredient and adds the peppery taste that makes it all come together.

Ingredients

Recipe serves: 4
1 large cucumber, cut lengthwise, seeded, and sliced ¼-inch thick
1 green bell pepper, chopped into 1-inch pieces
1 1/2 cups cherry tomatoes, cut in half or one large tomato cut 1/4 inch pieces
5 ounces feta cheese, cut into ½ inch cubes or about 1/2 cup crumbled feta
1/4 cup red onion, finely diced
⅓ cup pitted Kalamata olives, cut in half
1/2 cup fresh mint, slivered in ribbons
dressing
3 tablespoons olive oil
juice of one lemon
salt and pepper to taste

In a large bowl, toss together all vegetables and herbs. Add the cheese.

Drizzle over the olive oil and lemon. Toss together, taste and add salt and pepper according to your taste. Toss again, taste and serve.
