Ingredients

2 cups Greek (thick) yoghurt

1 small shallot or 2-3 cloves garlic, very finely chopped

3 Persian cucumbers or one large, cut in 1/4 inch cubes

5-6 mint leaves, finely chopped

salt, flakes are best to taste

fresh ground pepper, to taste

a few squirts of olive oil

add about 2 teaspoons of fresh dill, finely chopped

2-3 mint leaves for garnish

In a medium bowl, add 1/2 the shallots and all other ingredients and mix well. Season with salt and pepper to taste. Taste, and add more shallots to your preference (the worst is when you find something overpowering in allium flavor) |

Place in a small bowl and garnish with the whole mint leaves. |
